Chuy’s Tex-Mex has a fair number of menu items that can accommodate a vegan diet. You can find the list of vegan-approved dishes below (with the necessary modifications to make the dishes vegan).
Please note that when I reached out to Chuy’s corporate offices, they told me that all items are prepared on surfaces where traces of animal products can be found. Therefore, nothing is officially certified vegan. That being said, the following list are the items that do not contain any animal products.

Commenting as we’re sitting in Chuy’s. We were just told that the Charro Beans contain chicken broth.
Oh no! Can you please tell me which location so I can contact their corporate office and clear this up?
I am not able to get the Bean and Cheese Sopapilla at some locations (Charlotte, NC for example). They only know the dessert Sopapilla not the one stuffed with bean and cheese. I’m not sure if this is only available at certain locations. It’s not on the menu but I used to have it with no problem in Dallas, TX.
Their flour tortillas are vegetarian but not vegan. Their rice has chicken stock. They have ingredients that their servers have to memorize to advise clientele with dietary restrictions.
We were told at the El Paso location that their refried beans are not vegan.
I’ve gone to chuys twice in fairfax and told that beans are not vegan )= so be careful and clarify at your location
