Olga’s Kitchen is a Mediterranean-inspired restaurant serving up “olgas,” which are sandwiches wrapped in a special flat bread. In addition to these sandwiches, they also serve soups, salads, and more. I reached out to their corporate office to find out which menu items are considered vegan. A few notes from Olga’s:
- The Caesar dressing has anchovy in it and is therefore not ok for vegetarians (unless the guest is pescatarian) or vegans.
- None of the soups are vegetarian or vegan. The peasant soup and chili have meat directly in them and the Broccoli is made with Chicken stock.
- Olga bread is Vegan, and is made with sugar from sugarbeets. Cane sugar is not vegan because of a process where they use animal bone char to refine the sugar.
The Detroit Free press published an article a few years ago with the recipe for Olga’s Kitchen famous Flat Bread. It has milk, eggs, honey in the ingredients list.
Olga Bread
1 cup milk
1/4 cup honey
1/4 cup margarine (I use butter)
1 teaspoon salt
1 package active dry yeast
1/4 cup warm water
1 teaspoon sugar
4 cups all-purpose flour, divided
1 egg
Olga’s facebook page says the bread is vegan. So what’s the substitute for the eggs, then, I wonder? All the copycat recipes online include an egg.
