Sturgeon can refer to one of 27 different species of fish (in the family Acipenseridae). Sturgeon can be quite large fish, with some growing up to 12 feet! Sturgeon are primarily fished for their roe (to be processed into caviar), but their flesh is popular to be consumed as well.
According to Chabad, who received their information from the Orthodox Union, sturgeon is NOT a kosher fish.
However, after consulting with a number of marine biologists, the Conservative Movement ‘s Committee on Jewish Law and Standards has ruled that swordfish and sturgeon are kosher. So you see, this fins and scales business is more complicated than it might seem.
